Continuing my experiment to see what I can create with cassava flour, I’ve came up with another hit. I got up this morning and wanted something a bit filling. Of course, with my handy dandy homemade cassava flour, I kept it simple. Making something that is so versatile for breakfast, brunch or lunch. Once again, I wasn’t disappointed.

What I love about the cassava flour is it’s smooth consistency and how the dough is easy to handle. This dough was particularly easy to work with because of the ingredients. There is enough to keep the tortilla moist.

You’ll notice this when you touch the tortilla and when you eat it. It turned out really well surprisingly. And the reason I say surprisingly is because this was my first time making a tortilla from scratch. I saw a few recipes online but never attempted any until now. I have to say, I’m kind of proud of myself.

This was a delicious way to start of my day. Paired with ripe plantain, sausage, eggs and cheese, it was perfect. You don’t have to use any of these ingredients as a filling. Think about what you want, mix it up! I wish I had some mozzarella cheese to go with this.

But honestly, I don’t think the wraps could handle anymore ingredient. I had to hold onto it tight. It almost fell out of my hands. The wrap was probably too small that hold all the ingredients inside of it. So when you make this, think about what you will be using and make sure the size is right. Use a larger pan if the need arises.

Tortilla (makes one large tortilla)

  • 1/3 cup cassava flour
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp oil I used coconut oil
  • One egg
  • ½ cup warm water
  • Herbs & spices optional
  • butter for frying


  • 1-2 eggs
  • Sausage or any meat of your choice
  • ½ of a ripe plantain or a whole if you want more
  • Cheese of your choice I used Cheddar
  • Veggies optional
  • Oil for frying coconut oil


  1. In a bowl, add the oil, flour, baking powder, salt and spices. Mix together using a spoon then form into a dough with your hands.
  2. Using a rolling pin (or a round bottle) and plastic wrap, roll the dough out into circular shape like a tortilla.
  3. Place a pan over medium heat and add butter. Place the dough into the pan. Cook on each side for about 5 minutes or until golden brown. Once it's done, place in a tortilla warmer or cloth with foil to keep it warm.
  4. Meanwhile, slice up the sausage (or any meat), whisk the eggs together in a bowl and slice the ripe plantain lengthwise.
  5. Place a frying pan over medium high heat and add oil. Cook the plantains until golden brown. Once it's done, place on paper towel to drain. You can either fry the sausage or boil it to cut down on fried food. Cook the egg scrambled then remove from the pan onto paper towels.
  6. Once everything is done, you can begin to assemble the wrap. Slice the cheese and layer it on the tortilla, add the eggs, plantain, sausage and any other veggies or peppers you'd like. Take one side of the tortilla and fold over then take the next side and fold over the other. Turn the seem side down, cut the wrap in half and place it on a plate. Serve immediate.

Recipe Notes

Please note that this wrap is best served warm. I'm not sure how long it's keeps for, so it's best to try storing it in the fridge for up to a week first.
